Quinoa Tabbouleh (Vegan and Gluten Free)

Quinoa Tabbouleh Recipe

This Quinoa Tabbouleh (Keen-wah Ta-boo-lee) is a perfect "throw together" dinner or side dish. Both Vegan and Gluten Free, it is a light and flavorful dish that's always a win!


1 cup Quinoa
1 1/4 cup water
1/2 tsp salt
1 large tomato (diced)
1/4 onion (diced)
1/2 cucumber (chopped)
1/4 cup fresh mint (chopped)
1/4 cup parsley (chopped)
salt and pepper (to taste)
1/2 cup extra virgin olive oil
2 tbsp lemon juice
1/2 tsp garlic powder

Quinoa Tabbouleh Recipe

1. Add water, Quinoa, and salt to a pot and bring to a boil. Reduce heat, cover, and simmer until tender (about 15 minutes).

2. Spread Quinoa in a baking dish or pan and let cool for about 10 minutes.

3. Mix together dressing (olive oil, lemon juice, garlic powder) while Quinoa cools.

4. Add in remaining ingredients and toss thoroughly.

5. Pour half of the dressing over the mixture and stir.

6. Drizzle remaining dressing over individual servings as desired.
