Delicious Pumpkin Muffins Gluten Free

These Delicious Pumpkin Muffins are to die for! Seriously, you'll be glad this recipe makes 12, and even that may not be enough!
If you don't need them to be gluten free, simply replace the gluten free flour with all purpose flour (cup for cup) and eliminate 1 tsp baking powder.


Ingredients:
1 can pumpkin pie filling (or use 2 cups Homemade Pumpkin Puree like we do!)
2 cups Gluten Free All Purpose Flour Blend
3 eggs
1/2 tsp cinnamon
1/2 tsp nutmeg
2 tsp pumpkin pie spice
1/4 tsp salt
2 1/2 tsp baking powder
1/2 cup coconut oil (melted)
1 1/4 cups sugar (plus 2 tbsp for sprinkling)

Delicious Pumpkin Muffins Recipe


1. Add all ingredients except for the flour, cinnamon, and nutmeg, and mix well.


2. Add flour one cup at a time and stir until fully incorporated.

3. Spoon into greased muffin pan and bake for 20-23 minutes at 350 degrees.

4. Combine 2 tbsp sugar, cinnamon and nutmeg in a bowl and mix well, then sprinkle on the tops half way through the baking time.

5. Allow to cool in pan for about 10 minutes, then move to a rack to finish cooling.
