Homemade Granola (Vegan and Gluten Free)

I wish I could take credit for this Homemade Granola recipe, but the base of it came from my sister-in-law...we just tweaked it a little to suit the diets in our house!
Vegan and Gluten Free, this granola will not last long at all, so if you can double up the batch...do it!


4 cups Gluten Free Oats
1/3 cup brown sugar
1/3 cup coconut oil (melted)
1/2 cup real maple syrup
2 tsp vanilla
1 cup chopped almonds
1 cup shredded coconut (unsweetened)
1 cup dried cranberries

Homemade Granola Recipe

1. Add coconut oil, brown sugar, and vanilla to a bowl and mix well.

2. Add maple syrup, then add oats one cup at a time, stirring to make sure they are all well coated.

3. One ingredient at a time, add the coconut, almonds, and cranberries.

4. Mix well, then spread onto a baking pan and bake for 40 minutes at 325 degrees, stirring every 10 minutes.
*I usually split it between 2 pans so it's easier to mix at the 10 minute intervals.

5. Remove from the oven and let cool for 20 minutes before storing in an air tight container.

*Ingredients in step 3 can be substituted with different ones (same amounts) to suit your taste, this is just the favorite mixture in our house!
