Gluten Free Lemon Poppyseed Muffins

These Gluten Free Lemon Poppyseed Muffins are all around goodness! They have sweet and sour wrapped into one little delicious bundle of goodness that you can eat for breakfast, snacks, or dessert!


1 1/4 cups sugar
1/4 cup poppyseeds
2 tbsp/2 tsp grated lemon peel (divided)
1 tbsp baking powder
3/4 tsp xanthan gum
1/2 tsp baking soda
1/4 tsp salt
2 eggs
1/2 cup butter (melted)
1/2 cup milk
1/2 cup/2 tbsp lemon juice (divided)
1 cup powdered sugar

Gluten Free Lemon Poppyseed Muffins Recipe

1. Combine in a large bowl: flour, sugar, poppyseeds, 2 tbsp lemon peel, baking powder, xanthan gum, baking soda, cardamom, and salt.

2. Add butter, milk, and 1/2 cup lemon juice, and mix well.

3. Spoon batter into lined/greased muffin tins (makes 18 small muffins).

4. Bake at 400 degrees for 15-20 minutes, or until toothpick inserted comes out clean. Cool for 10 minutes.

5. Mix together powdered sugar, lemon peel, and lemon juice to create pourable glaze, and spoon over muffins. Serve warm or at room temperature.
