Spinach Quiche Recipe

This Spinach Quiche Recipe is very forgiving when it comes to spices/ingredients, so don't be afraid to play around with it a little to suit your taste!
This makes a great appetizer, and we've even had it with salad for a light dinner!

1 9-inch deep dish pie shell
2 tbsp butter
2 cloves garlic (minced)
1 small onion (chopped)
1 package frozen chopped spinach
1/4 cup feta cheese (crumbled)
1 cup shredded cheddar cheese
4 eggs (beaten)
1 cup milk
salt and pepper to taste

Spinach Quiche Recipe

1. Melt butter in a pan and sautee onions and garlic (until tender, about 5-7 minutes).

2. Stir in spinach and feta, as well as 1/2 cup shredded cheese.

3. Season with salt and pepper, then spoon mixture into pie crust.

4. Whisk together eggs and milk and pour over mixture in pie shell.

5. Bake for 15 minutes at 375 degrees, then sprinkle remaining cheese on top. Bake an additional 30-35 minutes, until center is set.

6. Allow to cool 10 minutes before cutting.
