Blueberry Zucchini Bread

This Blueberry Zucchini Bread is so moist and yummy, I felt like I was eating cake!
Both Vegan and Gluten Free, this recipe truly surprised me with how soft and sweet it was! 
And as an added bonus, it is sweetened with coconut sugar. Perfect for diabetics as it has no effect on blood sugar levels!

1/3 cup almond flour/almond meal
1/3 cup coconut sugar
1 1/2 tsp baking soda
1 tsp ground ginger
1/2 tsp sea salt
1/4 cup coconut oil (melted)
1 cup water or almond milk
1 tsp vanilla
1 zucchini (grated)
1/2 cup fresh blueberries
