This Vegan Mini Berry Cheesecake Recipe makes 16 mini cheesecakes, and is completely gluten free and dairy free!
Change up the berries you use for a new flavor every time!
Ingredients:
CRUST:
3/4 cup gluten free oats
1/3 cup pecans (Chopped)
2 tbsp pure maple syrup
2 tbsp coconut oil (melted)
FILLING:
1 1/2 cups raw cashews (soaked at least 2 hours)
3/4 cup fresh or frozen berries
1/3 cup unsweetened coconut milk
1/2 cup pure maple syrup
1/4 cup coconut oil (melted)
1 tbsp fresh lemon juice
1/2 tsp lemon zest
1 tsp vanilla
1 cup additional berries (for garnish)
