This French Veggie Loaf is both nutritious and delicious! With a variety of veggies mixed in, it's practically a meal in itself!
*NOTE*
Due to the density of the vegetables it wont rise too much, so feel free to fill the loaf pan right up!
A small onion can be chopped and substituted for the shallot.
2 tbsp olive oil (for pan)
1 shallot (chopped)
1 clove garlic (minced)
1/2 green pepper (diced)
1 tomato (seeded and diced)
1/2 eggplant (cubed)
1 zucchini (diced)
1 1/4 cups self rising flour
3 eggs
1/3 cup milk
1/3 cup olive oil
1 1/2 cups shredded swiss cheese
salt and pepper to taste
French Veggie Loaf Recipe
1. Heat 2 tbsp oil in large pan over medium heat, and stir in shallot, eggplant, pepper, garlic, tomato, and zucchini. Stir until soft (about 15 minutes) and season with salt & pepper.
2. Mix flour, eggs, and milk in a large bowl, then add oil and mix well.
3. Slowly add in vegetables until they are all mixed in, then stir in swiss cheese.
4. Pour into a 9x5 loaf pan (greased and floured) and bake for about 45 minutes at 375 degrees (or until a stick can be placed into the middle and come out clean).
5. Allow to cool about 15 minutes before removing from the pan and cooling on a rack.
6. Allow to cool completely before slicing.
