Quinoa Stuffed Peppers

Quinoa stuffed anything is always a fave of mine, but these Quinoa Stuffed Peppers really top the charts!
These are such a satisfying and nutritious meal, anyone you serve them to will want the recipe!


Ingredients:

4 large bell peppers
1 medium onion (diced)
4 cloves garlic (minced)
4 cups fresh baby spinach
2 large carrots (grated)
3/4 cup uncooked quinoa
2 cans diced tomatoes (drained, liquid reserved)
1 can black beans (drained and rinsed)
1 tsp cumin
1 cup shredded colby jack cheese (or cheese of choice)
