Easy Vegan Vanilla Cake

This Vegan Vanilla Cake is great because it's not too heavy despite the lack of butter or eggs, and it tastes delish!
We substituted applesauce instead of canola oil and it tasted amazing, and is much healthier to boot!

Ingredients:

2 1/4 cups all purpose flour
1 1/2 cups sugar
3/4 tsp baking powder
3/4 tsp salt
1 1/2 cups cold water
3/4 cup canola oil (or substitute with 3/4 cup unsweetened applesauce!)
1 tbsp vanilla
3 tbsp lemon juice
