Sweet Potato Quesadilla Recipe

Sweet Potato Quesadillas are delicious, and incredibly healthy! The combination of the sweet potato and cheese flavor is out of this world, and you will be surprised how filling this simple recipe really is!
Be prepared to store left overs for lunch the next day!

1 large sweet potato
1 tsp fresh chopped cilantro
1/2 tsp chili powder
1/2 tsp salt
1/4 cup corn
1 can black beans (drain and rinse)
8 tortillas
1 cup shredded cheddar cheese (use Daiya cheese shreds for a non-dairy version)
cooking spray

Sweet Potato Quesadilla Recipe

1. Place peeled potato in pot and cover with salted water. Bring to a boil, then reduce heat until potato is tender (about 10-15 minutes).

2. Drain and mash potato with cilantro, salt and chili powder. 

3. Spread potato mixture onto tortilla, and top with 1/4 cup black beans and 2 tbsp corn.

4. Add 1/4 cup shredded cheese and top with second tortilla.

5. Spray frying pan with cooking spray, and add quesadilla, cooking until cheese is melted and beans are heated through (about 5 minutes on each side).

6. Complete steps 3-5 with the remaining tortillas, slice like a pizza, and enjoy!
