Eggplant Parmesan is a great recipe to have up your sleeve for those who may be skeptical of a vegetarian diet. This was the recipe that convinced my husband he could still have the delicious taste he was used to, as well as the full stomach after, without meat!
1 Eggplant (Peeled and sliced)
1 egg (beaten)
3/4 cup Italian Seasoned bread crumbs
2 cups pasta sauce
1 1/2 cups shredded mozzarella cheese
1/4 cup parmesan cheese
1/4 tsp basil
Eggplant Parmesan Recipe
1. Peel and slice eggplant, about 1/4-1/2 inch thick.
2. Dip each slice of eggplant in the egg, then cover in breadcrumbs, and place on a baking sheet (single layer).
3. Bake at 350 degrees for approximately 5 minutes on each side.
4. Spread 1/2 the pasta sauce on the bottom of a 9x13 baking dish, then place the eggplant in a single layer.
5. Sprinkle 1/2 the parmesan cheese and 1/2 the mozzarella cheese overtop.
6. Repeat with remaining sauce, mozzarella, and parmesan cheese (in that order), and sprinkle basil on top.
7. Bake at 350 degrees for 30-35 minutes, serve on spaghetti noodles.
