These Vegan Roasted Pumpkin Seeds have literally been my life for the last couple of days...until last night...when they were all gone!
Not to worry though, I started hunting online to see if there were any good sales on all the pumpkins I will need to fulfill my new addiction!
Ingredients:
pumpkin seeds ( we got about 2 1/2 cups from our pumpkin)
2-3 tbsp extra virgin olive oil
1 tsp sea salt
Vegan Roasted Pumpkin Seeds Recipe
1. Clean off the seeds so none of the orange bits are left on them.
2. Add to a small pot, add water just enough to cover them, and bring to a boil.
3. Once it is boiling, remove from heat and cover, let sit for 10 minutes then strain.
4. Spread into a single layer on a baking sheet and add the olive oil. Shake around until they are all coated. Sprinkle with 1/2 tsp salt.
5. Bake at 400 degrees for 20-25 minutes, stirring half way.
6. Remove from the oven and transfer to a paper towel lined dish (to get rid of any extra oil) and sprinkle with the remaining salt.
7. Allow to cool for at least 15 minutes before devouring ;)
